πŸ… Ratatouille! Such a simple yet yummy meal. Thank you @emilyeatingfood for sharing this with us.

Ingredients:
– 1 Large Squash
– 1 Large Zucchini
– 1 Large eggplant
– 3 Large tomatoes
– 2 Bell peppers
– 3 tbs of olive oil
– 2 tbs of minced garlic
– 2 tbs of basil
– 2 cups of Tomato sauce
– 3 tbs of coconut cream

Instructions:
Cut your vegetables into thin rounds, and put them in a pan (I tried to arrange the sliced veggies in a circular alternating pattern to make it prettier).

Evenly disperse the olive oil, garlic and basil on top of the veggies.

Pour your tomato sauce on top of the vegetables to fully cover them and dollop the coconut cream on top of it.

Bake this in the oven at 375 for about 1 hour and it’s ready to eat!!!
