This takes around 1 minutes, and is a hearty, filling and delicious meal!✨

INGREDIENTS: (serves 4)
– Broth
? 1 onion
? 2 tablespoons of sriracha (depending on spice level)
? 2 cups of mushrooms (I used button)
? Pinch of salt and pepper
? 2 tablespoons of soy sauce
? 1 tablespoon of cumin powder
? 4 cups of vegetable stock
? 4 cups of water
? 1 tablespoon of olive oil
? Noodles of choice (I used ramen)

– Toppings:
? 2 Celery stalks
? 2 large potatos (sweet and/or white)
? 2-3 cups of Brussel sprouts
? 2 large carrots
? 3 medium sized tomatoes
? 3 cups of broccoli
? 1 capsicum (I used yellow)
? 2 cups of mushrooms (I used button)
? Tofu or tempeh


1. Sauté the onion and mushrooms in the olive oil until soft.
2. Add the water, vegetable stock, mushrooms, spices and sauces and bring to a simmer.
3. While simmering, cook the noodles in a pot of boiling water with any spices of choice.
4. Take the toppings and cut them according to ones desire. Add olive oil and any spices of choice and mix. Add them to a tray and bake until soft (around 40 minutes on 180).
5. Once everything is cooked, assemble with the noodles at the bottom, then pour the broth over it, and then add the toppings. (Watch recent reel for assembling and results!)
