⚡️Raisin & Cashew Biryani ⚡️
What you’ll need;
• ½ Cup Raisins
• ½ Cup Chopped Cashews
• 1 Chopped Courgette
• 200g Jasmine Rice
• 1 Tsp Cumin
• 1 Tsp Mustard Seeds
• 3 Garlic Cloves
• 1 Tsp Garam Masala
• ½ Tsp Tumeric
• ½ Tsp Chilli Flakes
• ½ Tsp Salt
• 1 Tbsp Tomato Paste
• ½ Cup Frozen Peas

Method⚡️
• Boil your jasmine rice for 10-15 minutes until all water has been absorbed.
• Heat mustard seeds, cumin, garlic and chopped courgtte in a frying with some oil. Then add your garam masala, turmeric, chilli flakes, salt, tomato paste.
• Pour in your cooked jasmine rice and frozen peas and mix until combined. Once your peas have softened add your raisins, chopped cashew nuts and mix together.

⚡️Chickpea Curry⚡️
What you’ll need;
• 200g Chickpeas
• Onion
• Mushrooms
• Pepper
• 1 Tin of Chopped Tomatoes
• 3 Cloves Garlic
• 1 Tbsp Ground Ginger
• ½ Chili Flakes
• 1 Tsp Salt
• 2 Tsp Mild Curry Powder
• 1 Tsp Garam Masla
• 1 Tsp Cumin
• 1 Cup Veg Stock

Method⚡️
• Add the chickpeas to a large pot, cover with several inches of water and bring to a boil. Boil for 5 minutes then take the pot off of the heat and let the beans sit in the water for 1 hour.
• After soaking the chickpeas, add them to a new large pot, cover the chickpeas with several inches of water, and bring everything to a boil. Reduce the heat and simmer until they reach your desired tenderness, 1 and 1/2 to 2 hours.
• Chop your mushrooms, peppers, onions and garlic. Add them to a heated frying pan with a drizzle of oil. Then add the ginger, chilli flakes and cook veg until soft. Then add your tin of chopped tomatoes and stir for one minute.
• Mix in the curry powder, garam masala and cumin. Then add the veg stock , stir around then cover the pot and let it simmer for 40 minutes.
• Serve alongside your biryani, top it with some fresh coriander and enjoy with flatbreads.
