rainbow veggie stir fry
ingredients:
•150g noodles (vegan, of course)
•coconut oil (or any other vegetable oil)
•ginger (i’m a huge ginger lover but you can adjust how much you want depending on your taste)
•red onion
•large carrots
•spring onions
•tenderstem broccoli
•pak choi
•purple cabbage
•baby corn
•mangetout / sugar snap peas
•soy sauce
method:
1.cook the noodles as per the pack instructions
2.meanwhile, heat the oil in a wok and throw in all your veg on a high heat for around 2-3 minutes
3.drain the noodles thoroughly and add them to the vegetables
4.mix it all in with some soy sauce and cook it further for another minute or so
plate up and get the yums in your tums ?
