Rainbow Rice Noodles by @plantbased.traveler! ๐ A simple combination of rice noodles, mixed veggies, and a sweet โn spicy peanut dressing!โ

So easy to prepare, versatile colorful, and most importantly delicious! ๐โ

For one large bowl you need:โ
1 serving of rice noodlesโ
About 2 cups of mixed veggiesโ
(I used rainbow carrots, scallions, peas, corn, shelled edamame)โ

Sauce:โ
1 heaping tbsp peanut butter (crunchy or smooth)โ
Juice of a 1 small limeโ
1 tbsp maple syrupโ
1-2 tbsp coconut aminos (to taste)โ
1/2 tbsp (or more) chili crisp *โ
A few tbsp of hot waterโ

Optional toppings:โ
Chopped roasted peanuts and cilantroโ
More chili crispโ

Method:โ
Prepare noodles according to package directions. If using frozen corn,peas or edamame simply add them to the boiling noodles the last couple of minutes to heat them up!โ
In the meantime slice carrots, scallion or the vegetables youโre using.โ
Whisk together peanut butter, maple syrup, lime juice, coconut aminos, chili crisp and a few tbsp of the hot noodle water.โ
Drain and rinse noodles, then sautรฉ carrots and scallions for a 1-2 minutes (I like to keep them firm). You can skip this step and add them raw, depending on preference and which veggies youโre using.โ
Mix the noodles with your sauce and veggies, top with more chopped peanuts, cilantro, extra chili crisp, and enjoy!โ

*If you donโt have chili crisp you could sub a drizzle of chili oil and/or chili flakes, sambal oelek, or sriracha
