Rainbow quinoa salad!
This crunchy salad is great for a quick lunch or to travel. It’s full of different vitamins from fresh and colourful veggies and tastes great!
Ingredients:
For the salad:
1 cup of uncooked quinoa
1 1/2 cup of water
2 tbs of olive oil
2 large carrots, julienned
1 mini cucumber, julienned
1/2 large red bell pepper, julienned
1 1/2 cups of purple cabbage, sliced thinly
10-15 cherry tomatoes, quartered
3/4 cup of shelled edamame
For the dressing:
1/4 cup of vegetable oil
1/2 tsp of pepper
Juice of 1/2 a lime
Zest of 1/2 a lime
1 large clove of garlic, minced
1 tbs of agave syrup
1/4 tsp of salt
Method:
1. Rinse uncooked quinoa, then, in a large saucepan toast the quinoa in olive oil for 2 minutes. Add water, and bring to a boil, then simmer, uncovered for 12-15 minutes until cooked and fluffy
2. Simultaneously, wash and cut vegetables
3. In a small Tupperware, add vegetable oil, pepper, lime juice, lime zest, garlic, agave, and salt. Shake well
4. Mix together quinoa, vegetables, and dressing until well combined. Enjoy!
