this quinoa vegetable bowl just simply nourishes the mind body and soul. but seriously it’s so simple and so yummy.

ingredients:
1/2-1 cup cooked quinoa
1tbsp avocado oil
2 kale pieces
1/4 red onion
1/2 small zucchini
1/4 avo
1/2 lime

how to make:
cook your quinoa:) 1 part quinoa to 2 parts water
start with a pan that can be covered with a lid
pour a liiiiitle bit of water to it and add the brussel sprouts
cover for three minutes
once done, set aside
with the same pan drizzle avo oil and let sit for 30 seconds
add zucchini unt bottom gets a little brown and then flip
add brussel sprouts and all the other vegetables and quinoa into the pan and sauté until vegetables are done to your liking
top with avo, juice of 1/2 lime, salt and pepper
