Quinoa Stuffed Butternut⁠⠀

A light yet wholesome lunch or dinner idea. Warm quinoa encased in a sticky, roasted butternut half. Perfect as a meal prep for one or for the whole family!⁠⠀

Prep. Time: 25min; Cook Time: 1 hour; No. of Servings: 2-4⁠⠀

Ingredients:⁠⠀
1. 1 cup Phyto Pro Plant Food Quinoa⁠⠀
2. 1 butternut halved⁠⠀
3. 2 tsp salt⁠⠀
4. Handful fresh coriander, chopped⁠⠀
5. 1 tbsp cumin⁠⠀
6. 1 tsp chili flakes⁠⠀
7. 1 tsp paprika⁠⠀
8. 1 tbsp olive oil⁠⠀
9. 1 tbsp coconut oil⁠⠀
10. 1 tsp ground black pepper⁠⠀

Method:⁠⠀
1. Preheat the oven to 200ºC.⁠⠀
2. Cook the quinoa as per instructions: rinse and drain the quinoa. Add I cup quiona to 1 ½ cups water and 1 tsp salt and cook on a high heat for 15min, cover and set aside for 5min to fluff up. ⁠⠀
3. Cut the butternut in half and over with coconut oil. Place on a roasting/baking tray and bake in the oven for 45min or until soft.⁠⠀
4. Add the cumin, paprika and chilli to the cooked quinoa.⁠⠀
5. Once the butternut is cooked, scoop out the middle section of the butternut. Remove the seeds – either rinse and toast in a pan or throw away. ⁠⠀
6. Add the scooped out butternut to the quinoa along with the olive oil and the chopped fresh coriander.⁠⠀
7. Fill the butternuts with the quinoa mix and return to the oven for another 15min.⁠⠀

Serve warm salt and pepper to taste.⁠⠀
Keep in a sealed container in the fridge for up to 4 days.⁠⠀
Add some nutritional yeast for a slightly cheesy flavor.⁠⠀
