Quinoa Salad with Tangy Tamari & Lime Dressing

Ingredients

FOR THE SALAD

1 cup dry quinoa (rinsed)

2 bell peppers (red or yellow), diced

1 large carrot, chopped into thin pieces

½ small red onion, diced

1 cucumber, seeded and diced

2 scallions, white and green parts, finely sliced

½ cup fresh chopped cilantro

2 ½  Tbsp fresh chopped basil

FOR THE DRESSING

½ cup freshly squeezed lime juice (about 4-5 limes)

4 tsp tamari

1 ½  Tbsp olive oil

2 Tbsp sugar

Preparation:

In a medium saucepan over medium-high heat, bring 2 cups of water to a boil. Add quinoa. Simmer, stirring occasionally, until tender, about 15 minutes. Strain and transfer to a large mixing bowl. Place in the refrigerator to cool. This is very important! It tastes way better cold!

While Quinoa is cooking, prep the bell peppers, carrot, red onion, cucumber, scallions, cilantro and basil. 

To make the dressing combine the lime juice, tamari, olive oil,  and sugar in a medium bowl*. Whisk until the sugar is dissolved. 

Once the quinoa has cooled down, add the veggies and dressing. Toss until well combined. 

Tips:

*If you like a more savory flavor, you can add more tamari ( We like it really sweet, so we usually add more lime juice and sugar). Also, to spice it up add some red pepper flakes!
