Quick rice pudding

Have you ever made your own rice pudding? There’s a proper process of cooking rice in the milk etc. It basically takes a while… Here I’m bringing you an easy peasy alternative that you can eat within 5 mins! All you need is leftover rice, coconut milk, nut butter and your favourite toppings.

Creamy, healthy bowl of goodness that you can enjoy for breakfast, lunch or even dinner 😉

Here’s what you’ll need and how to make it:

Leftover rice
Coconut milk – I used @alprouk
1 tsp nut butter – I used @pip&nut crunchy #maplepeanutbutter
1/2 banana, mashed (or other fruit to sweeten the rice)
A tbsp of freshly cut pineapple (small cubes)

Toppings:
Strawberries
Blueberries
More fresh pineapple
Flaxseed, pumpkin & sunflower seeds, milled – I used @linwoods #organic
Milled #chiaseeds
Drizzle of peanut butter

Put a portion of rice in a small frying pan, cover with coconut milk and bring to boil. Reduce heat to medium, add 1/2 mashed banana, 1 tsp pb and small pieces of pineapple. Cook for 2 mins until creamy and bubbling.
Transfer to a bowl, arrange fruit, nuts and your favourite toppings on top and enjoy.
