QUICK MEDITERRANEAN QUINOA SALD
I made this recipe with my dad last week and it was so tasty, quick, and easy, that I decided to share it with all of you folks 🙂 My dad and I used tri-colored quinoa (first picture) which made it look really cool! When I made it with regular quinoa back at my house (second picture), it didn’t look as cool but hey, it still tasted amazing??
Yields: 4 servings
Total time: 20 minutes
Ingredients:
1 cup tri-colored quinoa (or regular quinoa)
1/2 red onion, finely chopped
1/2 red pepper, diced
1/2 large cucumber, quarter slices
3/4 cups cherry tomatoes, halved
2 small carrots, sliced
1/4 cup olives, sliced (optional)
1 can chickpeas, rinsed and raw
salt, to taste
2 garlic cloves, minced
juice of half a lemon
balsamic vinaigrette (optional)
1) Cook the quinoa according to packet instructions. To speed up the cooking process, cover the pot with a lid. If you don’t like your chickpeas raw, you can boil them in water until they reach your desired softness.
2) In the meantime, prepare all your veggies. When the quinoa (and chickpeas, if you boiled them) is done, mix everything together.
3) Chill in the fridge if you like it cold, but otherwise, you are done!!!
