quick mediterranean quinoa sald multip img 0 bf85178b

I made this recipe with my dad last week and it was so tasty, quick, and easy, that I decided to share it with all of you folks 🙂 My dad and I used tri-colored quinoa (first picture) which made it look really cool! When I made it with regular quinoa back at my house (second picture), it didn’t look as cool but hey, it still tasted amazing??⁣⁣⁣
Yields: 4 servings⁣
Total time: 20 minutes⁣

1 cup tri-colored quinoa (or regular quinoa)⁣⁣
1/2 red onion, finely chopped⁣⁣
1/2 red pepper, diced⁣
1/2 large cucumber, quarter slices⁣⁣
3/4 cups cherry tomatoes, halved⁣⁣
2 small carrots, sliced⁣⁣
1/4 cup olives, sliced (optional)⁣⁣
1 can chickpeas, rinsed and raw ⁣⁣
salt, to taste⁣⁣
2 garlic cloves, minced⁣⁣
juice of half a lemon⁣⁣
balsamic vinaigrette (optional)⁣⁣

1) Cook the quinoa according to packet instructions. To speed up the cooking process, cover the pot with a lid. If you don’t like your chickpeas raw, you can boil them in water until they reach your desired softness.⁣
2) In the meantime, prepare all your veggies. When the quinoa (and chickpeas, if you boiled them) is done, mix everything together.⁣
3) Chill in the fridge if you like it cold, but otherwise, you are done!!!⁣
