✔️1.5 medium size purple sweet potato (peeled, cut into round slices)
✔️1 TBS vegan butter
✔️3 cups vegetable broth
✔️1 TBS grated ginger
✔️A bit of cinnamon and nutmeg
✔️1 cup cashew milk
✔️Salt and pepper to taste
✔️Fresh parsley (finely chopped)

1 Melt the butter in a pot over medium-high heat
2 Add the sweet potatoes, pour vegetable broth, add grated ginger, a bit of cinnamon, and nutmeg. Increase the heat to high and bring to a boil. Reduce to a simmer, and simmer until the sweet potatoes can be easily pierced with a fork
3 Transfer the sweet potatoes to a blender to purée the soup
4 Back in the pot, add cashew milk. Heat on medium until the soup is heated through. Add salt and pepper to taste.
5 Sprinkle with black pepper and fresh parsley, and swirl some cashew milk over the soup to serve.

*Cashew milk
-Boil water, turn off heat, add 1/2cup raw cashew, leave it for 10 minutes
-Drain water, transfer to a blender, add 1cup plant milk, blend until smooth
