Pumpkin Spice Thumbprint Cookies (Grain Free. Nut Free. Refined Sugar Free. Vegan)
I’m getting in the fall spirit with these one bowl super allergen friendly cookies. I used @feastingonfruit tigernut shortbread recipe and put a square of @hukitchen pumpkin spice chocolate in the middle of each.
🍪Recipe: In a bowl, combine 1 cup tigernut flour, 1/4 maple syrup or allulose, 1 tsp vanilla extract, and an optional tsp of pumpkin spice if you really want to kick up the autumn flavors. Mix all ingredients to form a dough. Scoop balls from the dough and flatten the center with your thumb or the back of a spoon. Bake at 350 for 10 minutes or until slightly golden brown
