Pumpkin soup ??- Sweet and spicy butternut squash and carrot soup. Creamy and light. A bit unusual for summer, but oh well ?
?Ingredients:
?1 medium butternut squash
?1 tbsp oil or water
?3 tsp salt
?1 tsp black pepper
?2 tsp garlic powder
?102 fl oz water
?1 small onion
?1 pound carrots
?thumb of ginger
?Instructions:
Chop onion and ginger finely. Heat oil or water in a pot, add onion and ginger with a pinch of salt and cook until translucent. Add cubed butternut squash and chopped carrots. Let them fry for about 5 minutes, stiring often. Add water to the pot along with salt, pepper, garlic powder and bring to a boil. Simmer for around 1 hour. Blend wth hand blender.
