Pumpkin, Mushroom And Spinach Risotto!

Pumpkin, mushroom and spinach risotto!
Its all about living that gourmet food life on the road!

Ingredients
2 Tbl spoon Olive oil
1 Onion diced
6 cloves Garlic chopped
1/4 Pumpkin cubed
6 Button Mushrooms sliced
1 to 2 cups Arborio rice
1.5 – 3 Lt Veg stock
100g Spinach
Parmesan cheese to taste and on top

Method
Sautè onions in olive oil until soft and slightly coloured on medium high
Add garlic don’t let it go brown lower temp
Add pumpkin, cook slightly, keeping in mind it will soften when stock is added and risotto is cooking
Saute mushrooms
Season veg with salt and pepper
Add rice
Add 1/4 cup of stock, simmer until rice has fully absorbed liquid then kee adding a 1/4 cup at a time until rice is cooked.
Finish by adding spinach and parmesan
Serve with extra parmesan on top!
