PUMPKIN KALE SALAD




PUMPKIN KALE SALAD

+ SOY FREE⠀⠀⠀⠀
+ OIL FREE ⠀⠀
+ REFINED SUGAR FREE

Ingredients:

1 whole kale, roughly chopped
1 broccoli, florets
1/3 medium pumpkin, cubed
1 avocado, cubed
1/2 red onion, sliced
1 fresh chilli, finely chopped
1/4 cup tahini

Instructions:

Preheat the oven to 400F/200C. Line 2 baking sheet with parchment paper.⠀

Firstly cub the pumpkin and place it in the oven for about 20 min or until soft and golden. Remove from the oven and let it cool.

Meanwhile rinse and cut the rest of the vegetables. Place the broccoli and kale as well in the oven, place on two different baking sheets because the kale pieces need to be spaced out well.

Remove the broccoli from the oven when it gets brown spots and the kale when it starts getting crispy.

Place the cooked kale, broccoli, pumpkin and the rest of the ingredients in a big bowl and mix all well together. Transfer into salad bowls.
