Pumpkin gnocchi ??

My left-over pumpkin purée got turned into homemade gnocchis the other day.
The recipe was super easy, but forming the gnocchi with a fork was very time consuming. I would recommend a gnocchi board or a lot of patience ?

The recipe was from the website of @biancazapatka and so easy and vegan ?

Ingredients:
•300g pumpkin purée
•400g potatoes
•260g flour + more
•1 tsp salt
•nutmeg

How to:
If you don’t have the pumpkin purée ready, make some (f.e. by cooking 20-25min with water just covering the pieces and puréeing it)
Cook the potatoes for ~20min (depends on the size) and peel them afterwards. Mash the potatoes and add the pumpkin purée, as well as the flour.
Knead the dough a little and then cut it into 5 pieces, roll out each to a long big „noodle“ and cut into ~1,5cm pieces. Either add the structure with a fork or use a gnocchi board.
Cook them in boiling water until they float on top. Then their done!
I now fried them in a pan, added spinach, cream cheese, tomatoes and spring onions.
