PUMPKIN CARROT CAKE BAKED FRENCH TOAST ?? I bought a LARGE bag of carrots the other day at Whole Foods and I’m trying to find all the ways I can use them up! You might be seeing a carrot soup or pasta in the near future ? I had some leftover pumpkin from my Bundts earlier this week and knew dang this flavor combo would be perfect! I typically like to make this French toast the night before, but after coming home from teaching last might I was wiped out and just wanted to rest. Regardless, this French toast turned out still delicious, bread pudding like, and a lil toastie on top ✨ With a drizzle of coconut butter and maple syrup, this breakfast is a true TREAT!

Ingredients:
1 loaf ciabatta bread, cubbed
2 cups almond milk
2 shredded carrots
1/3 cup canned pumpkin
1/3 cup maple syrup
2 tbsp cornstarch or arrowroot
1 tbsp cinnamon
1/2 tsp nutmeg
1/2 tsp clove

Directions: whisk together batter ingredients to remove clumps + grease a baking dish + add in cubed bread + pour over batter and kinda move around to make sure it’s all covered + place in fridge to set overnight + in the morning: preheat oven to 350 F + bake pudding for 30-35 min or until Golden on top + drizzle with melted coconut butter + enjoy
