Pumpkin Banana Oat Cookies ๐Ÿ’› These are my favorite cookies, crunchy on the outside, soft inside, full of flavors but not too sweet โœจ Plus, they are vegan and super easy to bake! Find the recipe below ๐Ÿ‘‡๐Ÿป Happy new week and lots of love, Sarah x

Recipe for 20 cookies
1.5 cups oats
1.5 cups flour
1 tsp baking soda
2 tsp cinnamon
1 tsp ginger
Pinch of salt
1/2 cup coconut oil
1/2 cup brown sugar
1/2 cup pumpkin puree
2 bananas
Optional for decoration: chocolate chunks
Mix all dry ingredients in a bowl. In a food blender mix the oil and the sugar, then add the pumpkin puree and the bananas. Blend until smooth. Add the dry ingredients and pulse until you have a smooth dough. Place in the fridge for 30 min. Preheat the oven to 375F/180C. Form 20 cookies, place them on a baking tray and sprinkle with chocolate and pecans. Bake for 12 minutes. Let the cookies cool down and prepare an icing with lemon juice and icing sugar. Sprinkle over the cookies and enjoy! They won’t last very long, promised! .
