Puffed Quinoa Treats
10 Madjool dates
1/2 cup peanut butter (no sugar added, not palm oil)
1/4 cup cacao powder
2 tablespoons natural maple syrup
3 cups puffed quinoa
Water as needed
Add dates, peanut butter, cacao and syrup into a blender or food processor. Process until a smooth dough forms. This won’t be very sticky, more of an energy ball consistency, you can add a splash or two of water to help the mixture get smooth.
Transfer this mixture to a bowl and add the puffed quinoa little by little.
Using your hands, fold the cereal and dough together until combined.
Grease or line with parchment paper an 8X8 baking sheet and place the mixture into the pan.
Using your hands, firmly press the mixture into the pan until all the corners are filled.
Refrigerate for 1 hour.
Remove from fridge and cut into bars. Keep bars stored in the fridge.
