POTATO BLINIS W. A LOT OF LOVE 🌱⠀

VEGETARIAN AND GLUTEN-FREE – what’s better than that? ⠀

For this little lovely thing you will need: ⠀

POTATO BLINIS: ⠀
• 300g medium sized potato, boiled and mashed ⠀
• 250g of potato “flour” ⠀
• 4 eggs ⠀
• taste with salt and pepper ⠀
• 4 tbs 18% cream fraiche ⠀
• 3 tbs nutmeg ⠀
• 2 tbs paprika ⠀

INSTRUCTIONS: ⠀
• When the potatoes are boiled, drain the water and let them cook down for 5 minutes and mash it. ⠀

• Add 1 egg at the time. Add the remaining ingredients and mix well together, until it get a doughy consistency. ⠀

• Take a big pan and be sure it is hot with a little grease on it. Now make small pancakes. Bake for around 7-8 minutes in one side and switch. ⠀

POTATO SALAD W. COTTAGE CHEESE: ⠀
• 250g low fat cottage ⠀
• 2 tbs of 18% cream fraiche ⠀
• handful of chives, chopped finely ⠀
• 2 red apples, chopped in cubes ⠀
• 1 German turnip, chopped in cubes ⠀
• 100g medium sized potato, chopped in small cubes and boiled⠀
• Taste with salt and pepper ⠀
• Handfull of sunflower microgreens from @microfarm.dk ⠀

INSTRUCTIONS: ⠀
• Mix all the ingredients together. ⠀
• Top it with your delicious greens from @microfarm.dk 🌿
