Posted @withregram • @the.plantbased.cat Stuffed baked peppers with grated vegan cheese, nutritional yeast or just salt and pepper.
A meal all the family will enjoy, full of flavour and healthy.

Ingredients:
4 big peppers, desseded and halved
1 onion
3 garlic cloves
Oil
Half courgette, diced
Half carrot, diced
(Any other veggie you like)
1 pack of vegan mince
1 can chopped tomatoes
1tbsp tomatoo puree
Half cup water
Garlic powder, paprika
Dry parsley and coriander (finished the fresh one😒)
Salt and pepper
Vegan cream

How i made it:
Heat up the oven to 150°C.
In a frying pan add oil, when heat up add onion and fry for a min.
Add garlic, courgette and carrot and fry until soften.
Add the mince and fry for a few mins.
Add the spices and herbs and mix it all together.
Add tomatoes and puree and water and let it simmer until reduced.
Add salt and pepper if needed, or for a spicy flavour add fresh chillies when u fry the veggies.
Now after you halved the peppers and cleaned them fill them with the mince mix and place them in a baking tray.
Top it with vegan cheese, chillies, nutritional yeast or just plain.
Bake in the oven for 30 mins or cheese melted.
