Posted @withregram • @eastmeetsemily Super healthy spring rolls that you won’t feel guilty about after eating! Mama Bear made Bò Bía Chay for us growing up and it was definitely one of my favorites… and now one of my husband’s favorites. Love that I’ll be able to carry on her recipes. Let me know if you’re interested in how to make the dipping sauce!

INGREDIENTS
Fried Tofu, 8 oz sliced
Carrots, 3 medium shredded
Celery, 5 stalks sliced
Cabbage, 1/2 head sliced
Jicama, 2 cups sliced
Mint leaves, 1 bundle
Onion powder, 3 tbsp
Salt, 1/2 tbsp
Mushroom seasoning, 1 tbsp
Vegan fish sauce, 4 tbsp

INSTRUCTIONS
In a large pan on high heat, add the jicama and stir for 5-7 min or until translucent. Remove and add into a large mixing bowl. In the same pan, add the cabbage and stir fry for about 5 min or until softened. Drain the water and add into the same large mixing bowl. Using the same pan, add carrots and celery. Stir for about 2-3 min and then add in the fried tofu. Stir gently for another 1-2 min and add all contents into the large bowl. Add the onion powder, mushroom seasoning, salt and vegan fish sauce. Mix well. Adjust seasoning to taste and your bo bia chay is ready for wrapping. I used a soy vinegar sauce for dipping. Enjoy!
