PLANTED-BASED BREAKFAST SLICES
with hidden apple, zucchini and carrot

This morning I decided to us see my soaked oats and seeds not for the usual oatmeal, so I made this yummy slices which are same healthy.
************INGREDIENTS****************
DRY
* 1,5 cups quick oats (mine were soaked, so I used a bit less liquid)
* 3 tbsp rice flour or others
* 2 tbsp plant based protein powder (mine is so sweet that I do not need any additional sweetner)
* 2 tsp chia
* 2 Tbsp sunflower seeds
* 1 tbsp LSA
* 1/2 tsp cardamom ground
* 2 tsp cinnamon
* 1/4 tsp all spices
* pinch salt
* 1/2 cup raisins

OPTIONAL:
* 1 tbsp chai powder (I recommend @inshapemummy for breastfeeding mums)
* 1 tsp reishi mushroom powder @zoi_organic_au
* 2 tbsp marple sirup for more sweetness (I left this out)

WET
* 1,5 -2 cups soy milk
* 1 small carrot, grated
* 1 small apple, grated
* 1/2 small zucchini, grated

***********Instructions****************
1. Preheat your oven to 180C and grease a baking form or layer with baking paper
2. In a large mixing bowl, whisk all dry ingredients and spices, stir well.
3. Grate zucchini, carrot and apple, set aside.
4. Add mylk to the bowl with dry ingredients, stir well.
5. Add the bowl with vegetable into the large bowl and stir, lastly add raisins.
6. Pour the batter into the prepared tin.
7. Place in on the middle rack in your oven and bake for 45 minutes, or until the loaf is golden and an inserted toothpick comes out clean.
8. Remove from the oven and let it cool in the tin for ten minutes, then gently remove it 9. Serve slice warm and top with plantbased hazelnut spread or nut butter.

*Store cake when it complete cooled down. It keeps for 3 days in the fridge, wrapped well, and may freeze a few.
