PLANTED-BASED BREAKFAST COOKIES
************INGREDIENTS****************
DRY
* 1 cup quick oats
* 2 tbsp rice flour or others
* 2 tsp chia
* 1 Tbsp LSA
* 2 tbsp dark chocolate chips (I used snall pieces od 3 oreo cookies instead)
* 2 Tbsp protein powder, vanilla or cocoa
* 1 Tbsp cacao
* pinch salt
OPTIONAL:
* 1 tsp reishi mushroom powder @zoi_organic_au

WET
* 3/4 cup plat based butter
* if needed 1-2 Tbsp soy milk
***********Instructions****************
1. Preheat your oven to 180C and grease a baking form
2. In a large mixing bowl, whisk all dry ingredients and stir well.
3. Melt butter in the microwave or room temperature.
5. Add the butter to the large bowl and knead well.
6. Prepared baking tray with baking paper.
7. Form 2 inch balls and press flat to a 1/2 cm cookie and place in your oven and bake for 12 minutes.
8. Remove from the oven and store when complete cooled down.
