I didn’t grow up eating plantains, so these were a first for me. Black beans are a no-brainer when it comes to bulking out a dish cost effectively, but plenty of spices don’t hurt either. I used the more green plantains and shallow fried them after slicing them into ~1cm thick disks. Peeling the green ones is a pain, so prepare for that. Shallow fry them in oil at medium-high and keep an eye on them. They burn really fast; you do not want to see my failed plantains. They come out golden and delicious, but season them plenty with salt fresh out the oil. Pick de Gallo, sour cream, and hot sauce are very nice inclusions, but feel free to sub any or all of it!

??ingredients?? serves 3-4
2 green plantain
1 can of black beans
1 clove garlic
1/2 cup oil to fry plantains in
1/2 yellow or white onion
1 Tbsp cumin
1 Tbsp cajun spice mix (paprika, cayenne, celery salt, etc)
Serve with sour cream, hot sauce of your choice, and pico de Gallo (chopped tomato, cilantro, parsley)
