I handed over the kitchen reins to my husband again and he prepared this delicious lunch . He made these delicious patties from grated plantains mixed with nutritional yeast and seasoning. They were super delicious and oh so filling.

Plaintains are full of potassium, Vitamin A, Vitamin C, VItamin B-6 and magnesium and besides they taste delicious! One half cup of cooked plantains contains 3 grams of resistant starch, a healthy carb that boosts metabolism and helps to keep you full!

– salt & pepper

Salad:
-massaged kale
– chopped romaine
– red onions
– pickled cabbage
– mixed seeds
– orange slices

– flaky Maldon salt
