Pimp up your potatoes tonight! #throwback to one of the tastiest classic Indian potato dish – ‘Aloo Jeera’ translating to cumin potatoes. Healthy & garlicky (yes that’s a word!) , make this simple #vegan #vegetarian dish well under 30mins using 5 ingredients. Recipe ⬇️
⠀⠀⠀⠀⠀⠀⠀⠀⠀
• 3-4 medium potatoes (steamed or boiled), cubed 2cm
• 2 pods of garlic, roughly chopped
• 1/2 chopped green chilli (optional – adjust to taste)
• 1tsp cumin seeds
• 1tsp turmeric powder
• 2tbsp oil (use ghee if not DF & vegan) & salt to taste
⠀⠀⠀⠀⠀⠀⠀⠀⠀
➡️ Heat oil in pan on med heat. Once the oil is hot add the cumin seeds and allow to crackle
➡️ Add the garlic and sauté for 1 min
➡️ Add the cubed potatoes, turmeric & salt. Mix/toss till all the potato is well coated
➡️ Add a tbsp of water to the hot pan, mix and cover with a lid. Cook for 5-8mins. Stir in between to make sure nothing sticks to the pan. Add more water if required and continue to cook. (I cooked mine till they had a golden tinge to them)
➡️ Garnish with coriander and a squeeze of lime 😋

Serve as a side or as a main course. Best enjoyed with flatbread, rice or just by itself.
❗️Try not to over mix as this will result in a form of mashed potatoes (which isn’t a bad thing really) rather than pieces of potato. I like mine a bit flaked around the edges for a smooth yet bite texture. Cook for lesser time if you like you potatoes firm in shape ❗️
