Pic 1 or 2? Spoiler: both were absolutely DELICIOUS!! These are my two go’s at @rainbowplantlife vegan pumpkin ricotta stuffed shell recipe 😍⁠⠀

The second pic is technically not stuffed shells – I used small pasta shells (the biggest I could find in the grocery store) so it actually turned out to be more like lasagna, which was still SO GOOD! But I was determined to make it the proper way with the JUMBO stuffed shells 😛 so last week I finally realized the jumbo pasta shells were linked in the recipe (sold on Amazon).⁠⠀

The jumbo pasta shells aren’t organic (I normally don’t buy conventional wheat because I’ve heard it can affect the gut) but I figured one time wouldn’t hurt! It’s so crazy because as I was having this debate in my head, it occurred to me that whenever we go out to eat (not as much anymore obvi) none of the food is organic 😂 but it doesn’t bother me then. It becomes a mental thing when I’m actually buying the ingredients myself.⁠⠀

Anyhow – this recipe is SO SO YUMMY! Not going to lie, I feel like the jumbo shells were better (even tho both tasted the same) it just hits different when you take a bite of the big shell and the stuffed ricotta just BURSTS into your mouth 🤤 the FLAVOR is out of this world! I found myself just eating the ricotta on its own lol ⁠⠀

Also love that its also a high protein dish too (the ricotta is made from tofu + wheat /gluten from the pasta) So fulfilling and such a yummy treat! I highly recommend this gourmet vegan dish to impress dinner guests or yourself 🤣 (I sure was)⁠⠀
