Pesto: ⁣
1 ½ cup basil (loosely packed)⁣
1 cup cilantro (loosely packed)⁣
½ cup walnuts ⁣
¼ cup extra virgin olive oil ⁣
Vegan parmesan (I like violife)⁣
5 cloves garlic ⁣
Salt and pepper to taste⁣

Pasta: ⁣
3 cups farfalle pasta⁣
1 can coconut milk⁣
8-10 mushrooms ⁣
½ large tomato ⁣
Handful of cherry tomatoes (optional)⁣

Combine all the ingredients for the pasta in a food processor or blender. Cook the mushrooms on a skillet w oil for a few minutes. Add the pesto to another pan with some oil and cook for 1-2 minutes. Next, chop the large tomato, add to the pesto, and cook for another 3-4 minutes. Add the cream from the coconut can (the top thick part) to the pesto + tomatoes and mix! Next add in your pasta, mushrooms, and cherry tomatoes!
