i present plantbased causa limeña, this is like a peruvian potato casserole with different layers of goodness.

[Ingredients]

Potato Layer??

• 2 Gold Potatoes, peeled
• olive oil
• lime juice
• aji amarillo paste
• salt and pepper, to taste

??Filling??

•vegan tuna (vegan mayo, chopped nori or fish sauce, finely chopped red onion, lime juice, garlic powder, salt and pepper)
•1 tbsp fresh parsley, minced
•1 ripe avocado, sliced
•serve chilled

please try it and let me know how you like it. if you dont have access to amarillo you can just omit it and the potato layer will still be tasty.

if you want to replace the aji amarillo, you can use miso paste, turmeric paste, maybe even a curry paste. it depends on your taste buds and what flavors you want to combined.

additionally, you can use sweet potato instead of yellow potato. que creative.
