Roasted Butternut stuffed with mushroom & courgette + fine organic wine by @janhendrikvanderwesthuizen

Since lockdown, I’ve fallen in love with cooking and food being my medicine. I used to take so many supplements- my supplement cupboard could rival any health shop ?…. it’s been a source of amusement to many… ?… but since I’ve been experimenting with my weekly organic veggie box delivery- my life & my health have changed immeasurably. Each veggie or fruit contains so many vitamins, minerals, photo-nutrients & antioxidants and I love creating something new with whatever I find in the fridge… so this pairing was lots of fun. Thought I’d share if you feel inspired… ?

Stuffed Butternut
With mushroom & courgette

Ingredients:
– [ ] Onion
– [ ] Garlic clove
– [ ] Olive oil
– [ ] Salt
– [ ] Pepper
– [ ] Chili sauce
– [ ] Mushrooms
– [ ] 2 Courgettes
– [ ] Butternut
– [ ] White wine
– [ ] Soya sauce

Directions:
– [ ] Cut a large butternut in half
– [ ] Brush with olive oil, add a tablespoon water to keep butternut moist & sprinkle with salt. Bake for 45-70 minutes on 175 deg
– [ ] While butternuts are baking, chop onion & garlic & fry in olive oil. Add salt and simmer until slightly brown
– [ ] Add mushroom & finely chopped courgette.
– [ ] Add a tablespoon white wine (or lashings more ?) & 1 tablespoon soy sauce. Simmer until al denté
– [ ] Stuff the butternuts with stuffing & bake for 10 minutes
– [ ] Serve with an organic micro greens salad with tomato & cashew nuts
– [ ] Add dressing if choice & ladings of corriander
