Peanut Noodles & Spicy Air Fried Tofu (serves 4) by @thechowdown

For the tofu:
16oz extra firm tofu
1 tbsp tapioca or corn starch
1 red bell pepper, diced
1 tbsp chili oil
For the noodles:
8 oz ramen or rice noodles
1/3 cup peanut butter
1/3 cup reduced sodium soy sauce
2 tbsp fresh grated ginger
1 1/2 tbsp sesame oil
1 1/2 tbsp rice vinegar
1 1/2 tbsp maple syrup
Juice from half a lime
Water to thin, if needed (my PB was not runny so I added 1 tbsp water)
Broccolini or broccoli
1. Press tofu for 15 minutes to remove excess moisture. Cut into bite sized pieces, coat in tapioca or corn starch and place in air fryer basket. Spray with oil and air fry at 400 degrees for 10 minutes, or until desired crispiness is reached.
2. Meanwhile, sauté red bell pepper in the chili oil over medium heat until soft. Add crispy tofu to the pan and toss so everything is coated in the chili oil.
3. To make the peanut sauce, whisk together peanut butter, soy sauce, ginger, rice vinegar, sesame oil, maple syrup, lime juice and water to thin if needed. Pour sauce over cooked noodles and toss to coat.
4. Top noodles with spicy tofu, broccoli, edamame and top with sesame seeds and scallions.
