Peanut Energy Bites

Ingredients:
BASE
•140 grams rolled oats
•70 grams cashews
•100 grams pitted medjool dates
•1 tsp ground cinnamon
•60ml coconut oil
•2 tsp maple syrup

FILLING
•270 grams peanuts
•100 grams pitted medjool dates
•60ml coconut milk or coconut cream
•60ml coconut oil
•1 tsp vanilla extract
•100g natural peanut butter

Steps:
•For the filling, place peanuts in a bowl and cover with boiling water. Set aside for 2 to 3 hours
•Add oats to blender and blend until finely ground
•Add cashews to blender and blend until finely ground
•Add the dates, coconut, cinnamon,  coconut oil and syrup. Process until well combined.
•Press firmly over base of prepared pan •Use the back of a spoon to smooth surface. Place in fridge to firm
•Meanwhile, place soaked peanuts in blender and blend until finely chopped. Use a spatula to scrape down the side of the blender occasionally
•Add remaining filling ingredients and blend until smooth, scraping down side occasionally.
•Press firmly over the base. Use the back of a spoon to smooth surface. Place in fridge for about an hour to firm.
•Enjoy!!
