Peanut cauliflower curry recipe:
.
Ingredients:
2 cloves garlic
1 medium onion
1 tsp onion granules
1 tbsp tomato paste
1 1/2 cups shiitake mushrooms
4 cups cauliflower florets
1 cup tinned coconut milk
1 cup plant based milk from a carton (any unsweetened variety works well)
2 tbsp curry powder
1 tbsp garam masala
1 tsp cumin
2 tbsp peanut butter
2 tbsp tamari
1 cup green peas

Instructions:
Add the garlic, onion, onion granules and tomato paste to a non-stick saucepan with 2 tbsp water or 1 tsp oil, depending on your preference. Sauté for 3-4 minutes to soften. Now add the shiitake mushrooms and cauliflower florets. Continue to cook for a further 2-3 minutes until the mushrooms soften, and add the coconut milk, plant based milk, curry powder, garam masala, and cumin. Simmer, stirring frequently, for around 5 minutes, then stir in the peanut butter, tamari and peas. Continue to cook for around 5-7 minutes more, adding more plant based milk if necessary, until the cauliflower florets are tender. Serve with rice of your choice.
