Peanut butter and banana waffles
Another weekend day another stack but this time a waffle stack!
Ingredients
1 cup of plain flour
1/2 cup of cocoa powder
4 tbsp caster sugar
2 TSP vanilla essence
2 TSP baking powder
1 & 1/4 cup of soya milk
2 tbsp coconut oil
1/4 cup of peanuts
1 banana
Method:
Place flour, cocoa, baking powder and sugar into a bowl and mix. Next melt the coconut oil in a bowl in the microwave for approx 20-30 seconds doesn’t take long!
add in the vanilla essence, and soya milk and stir. Pour in the liquids into the flour coco mix and stir well I use an electric whisk to really make sure they are combined well. Now time to use your waffle iron!!!
We topped ours with smooth peanut butter, slices of banana and smashed roasted peanuts. Also had to add some vanilla soya yoghurt on the side too.
