Pea, broccoli and orzo salad with a lime and maple dressing

A quick lunch recipe that’s on the table in less than 30 minutes. Simply cook the pasta and the veg then throw together with the other ingredients. Couldn’t be simpler.

Peas are a great source of fibre and vegan protein but if you’re looking for even more protein serve with tofu or stir through some chickpeas.

I served mine with some pesto tofu and a lentil salad (recipe for that coming soon 😍).

Serves 4-6

Ingredients
250g orzo pasta
200g tenderstem broccoli
200g frozen peas
1/2 cucumber, chopped
15-20 kalamata olives
Vegan parmesan

Dressing
Juice of a lime
1 tbsp maple syrup
2 tbsp olive oil
1 tbsp apple cider vinegar
1 tbsp fresh parsley, chopped
1/2 tsp salt

1️⃣ Cook the orzo as per packet instructions, drain and rinse then set aside in a large serving bowl
2️⃣ Cook the peas and broccoli and run under cold water to cool then add to the serving bowl with the chopped cucumber, olives and orzo
3️⃣ Mix the dressing ingredients together, add to the bowl and mix through then top with some vegan parmesan to serve
