Pau Bhaji Tonight. A gorgeous fast food dish from India that’s finger licking good. We were reminiscing about our trips to Mumbai and missing our favourite dish our there so we decided to bring the dish home and great our own Mumbai evening at home.
2 medium aubergines
Two handfuls of peas
1 Teaspoon of garlic
1 teaspoon of ginger
2 green chillis crushed
1 teaspoon of chilli powder
2 teaspoons of salt
2 teaspoons of garam masala
2 teaspoons of pau Bhaji masala
3-4 large tomatoes
2 tablespoons of oil
2 tablespoons of butter
Chopped green chillies
How to create
💙Chop and boil all the veg except the aubergine
💙In a pan add the oil to heat and the garlic ginger and green chilli and mix and sizzle
💙Now add all the dry spices and only half the garam masala and half the pau Bhaji masala
💙Add the chopped tomatoes and cook until soft then grate the aubergine and add this to the mix and cook until the aubergine is soft
💙Now mash the boiled veggies and add to the other mixture and add the remainder of the garam masala and pau bhaji masala and mix through and cook until piping hot.
💙Put the butter on top and add some coriander leaves.
💙Serve with toasted bread rolls. To toast the bread rolls spread butter on both sides and add to a hot pan until crisp flipping every 30 seconds or alternatively you can just toast in a toaster and spread butter.
💙Enjoy with chopped onions tomatoes and green chillies
💙You can even add cheese on top for a twist.
The recipe works great with vegan butter and vegan cheese too 🥰
