Gnocchi with mushroom and baby spinach

Majority of people consider Gnocchi a pasta and I’m going to join them. 😊🌱

Gnocchi is an Italian pasta with the classic being potato gnocchi (Gnocchi di patate). They are made of cooked mashed potatoes, flour and eggs.
I have made mine Vegan friendly of course 🌱🌱

Recipe
Ingredients: 200g brown mushrooms, 250g Gnocchi, 300g of spinach leaves, 3 Tbs olive oil, 1 tsp mixed dry herbs, 1/2 tsp salt
Method:
Slice mushrooms. Place Gnocchi and mushrooms in a baking pan. Drizzle some olive oil and sprinkle with mixed herbs. Bake in oven on 200 degrees Celsius for 20 mins until Gnocchi starts to brown slightly. Remove from oven, toss in 2 handfuls of baby spinach leaves and put back in the oven for another 5 minutes until the leaves are wilted.

Remove from oven, plate and enjoy 😉
