Paniyaram/Appe with Onion-Garlic Chatni

Ingredients:
1 cup Urad dal
3 cup Dosa rice
1/2 tsp Fenugreek seeds
1 cup Beaten rice/Poha/Paper Avalakki
Handful finely chopped Coriander
1 inch finely chopped Ginger
2 Sprigs finely chopped Curry Leaves
1 finely chopped Onion
Salt as per taste
Oil for greasing tawa

Procedure:
Soak urad dal in one bowl and rice with methi in another bowl for 5 hours. Then, drain the water from both and blend together with a cup of beaten rice/poha(paper avalakki) to a smooth batter and transfer to a large vessel.
Cover and let it rest in a warm place for 8 hours allowing it to ferment. The next day, you can observe that the batter would have rised well indicating it is properly fermented. Mix the batter gently.

Now, add finely chopped, fried onion, salt, ginger, coriander leaves and curry leaves to the batter and mix well. Grease the appe pan with oil. Now, pour the batter slowly into each of the moulds of the appe pan. Cover and cook for 3mins on a low flame.
Then, slowly flip it over with a spoon and cook on the other side. Enjoy the hot paniyaram with Onion-Garlic chatni.
