Pancakes a weekend treat? 🥞
I don’t know about you, but I grew up having pancakes maybe once or twice a month – it was a weekend treat.
And I’m very grateful that my parents did that, because the pancakes we ate back then, were definitely not suitable for daily consumption.
Loaded with refined flour and sugar and topped with even more sugary sensations like jam, Nutella and ice cream 🍨- not a good choice for any breakfast:D
These pancakes on the other hand you can eat on a daily basis and provide you with everything for an energetic start into the day or for refueling your body after a morning workout.
They are full of protein, omega 3, complex carbohydrates and a lot more.
Enough beating around the bush, what do these pancakes have to offer?
1 serving Chickpea Pancakes with Date – Tahini Sauce (which usually is enough for 2 people)
– 1150 kcal
– 36g Protein
– 152g Carbs
– 35g Fat
How can Pancakes have such a wonderful nutritional profile?
– Instead of Refined flour I used chickpea flour, which is high in protein and fiber
– sugar got replaced by banana and dates
– and as an egg replacement I used ground flax which are high in healthy Omega 3 fatty acids.
For making these pancakes you only need a non-stick pan and a blender (even a hand blender might do the job)
1️⃣Blend all the pancake ingredients (swipe for the ingredients + add 1/2cup of water) together until you get a smooth batter and set aside while you 2️⃣blend up the sauce ingredients.
3️⃣Heat the non stick pan on medium heat and pour in the batter in desired pancake size portions.
4️⃣Flip once golden and pour over the sauce and enjoy 😛🥞🤤
