Palak Tempeh Mushroom 🤩 // vegan, gf, af

Hello friends I was pretty sick of tofu and I was thinking what’s the closest substitute and I realised mushrooms and tempeh?!! This combo was so bomb and I never thought of combining these two. It’s a lot less work because you just have to cut up the mushrooms and tempeh into cubes and pop them into the oven while you do the rest of the work 👍🏼 here are the #dEATs:

Ingredients:
4 giant oyster mushrooms
1 block of tempeh
3 – 4 cups of palak spinach
Handful of coriander
2 tomatoes
1 tsp ginger paste
1/2 green chilli
1/4 tsp turmeric
1.5 tsp garam masala
Salt, black pepper, hing
1/2 cup coconut milk

Directions: Cube mushrooms and tempeh. Coat in paprika, soy sauce, cumin, salt (I just gauged the amounts). Bake for about 15 minutes at 190C. Meanwhile, saute ginger, green chilli, tomatoes and spinach in olive oil. Once cooked, transfer to a blender, add coriander and blend. Add the paste back into the pan and add garam masala, turmeric, black pepper, salt, paprika (optional). Saute for 10 minutes. Add a splash of water, cashew butter (optional). Add mushrooms and tempeh. Add coconut milk, bring to a boil and simmer for about 5 minutes. Serve!
