Pad Thai Noodle Bowl with Crispy Tofu
They are just addictive..
I am using pad thai noodles and tofu with dried fruit (I found them in @lidlespana) but you can replace them with your choices.

100 gram tofu, 125 gram pad thai noodles or any other noodle you like, about 180 grams mixed vegetables of your choice (I used asiatic frozen vegetables), 1.5 tbsp soy sauce, 1 tbsp tahini, 1 garlic clove,1 tsp fresh ginger, 1 tbsp olive oil, some sesame and pepper flakes for garnish.
1. Drain 1 block of tofu. Wrap it with a few paper towel layers and let it sit on a plate about 15 minutes with a heavy object on top of it. (You can use a pot, heavy can etc.)
2. Prepare the sauce with minced garlic, grated fresh ginger, soy sauce, tahini and olive oil.
3. Set aside 1/3 of the sauce for tofu in a bowl and the rest for noodles.
4. Slice the tofu in cubes in the size you like. Bring the tofu to the bowl of sauce and mix gently. Set aside for 10 minutes to marinate.
5. Sauté the vegetables in a pot and cook the noodles according to package instructions. You may want to add some salt to boiled water while cooking the noodles.
6. After your noodles are cooked, drained them and do not rinse.
7. Take the vegetables from hit and add noodles. Bring the sauce to the same pan and toss them well.
8. Take the noodles now to a plate so you can use the same pot to cook tofu cubes.
9. Bring the heat to over medium/high and add the tofu cubes as single layer. Cook each side 3-4 minutes until it’s slightly golden/brown.
10. Top the noodles with some tofu cubes, sesame and pepper flakes.
