Overnight Oat Love 🧡 Recipe: Carrot cake overnight oats

Porridge is great but can be too warm in summer. Overnight oats are great as they are quick, delicious & filling.

These carrot cake overnight oats are a real treat. If you add protein powder it’s even more filling!

WHAT (1 serving):
•30g steel cut oats – extra fibre
•1/2 carrot – grated on the fine side of a box grater
•1Tbsp vanilla protein powder (optional – I use @formnutrition )
•2tsp goji berries
•1tsp each flax or chia seeds, sunflower seeds & pumpkin seeds
•Milk – plant (almond works well) or dairy
•Spices: pinch of cinnamon, allspice & nutmeg
•Optional: Sweetener to taste, vanilla extract (both not needed if using protein)

•In a clean jam jar or bowl mix the protein powder & 5Tbsp milk into a smooth paste / liquide. I use a handheld milk-frother – super handy. (Skip this step if not using protein.)
•Add all the other ingredients & pour over enough milk to cover. Give everything a good mix.
•Chill for a few hours or ideally over night.
•The next morning roll out of bed & top with yogurt & seeds. DONE!
