It’s been a while since the last time I made these lentils. 🌶 Flavored with a spice blend inspired by jerk seasoning. Actually consulted a Jamaican client who gave me some insight into what spices to incorporate and it definitely came out super tasty thanks to them. 🙂

Jerk Spice Blend
1 tbsp onion powder
1 tbsp garlic powder
1 tbsp smoked paprika
1/4 tsp cayenne pepper
2 tsp dry thyme
2 tsp dry parsley
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp allspice
1/2 tsp red pepper flakes
1/4 tsp salt
1/4 tsp pepper

Combine spices in a jar and mix well before using.

Lentils
1 cup dry lentils (I used black lentils)
1/2 a red onion, diced
1 red bell pepper, diced
1 inch ginger, minced
5 cloves garlic, minced
1 15oz can of diced tomatoes
1 1/2 tbsp jerk seasoning
2 tsp brown mustard
2 tsp maple syrup
3 cups mushroom or vegetable broth
Juice of 1/2 a lime
Zest of one lime

In a medium pot at in onion and sauté until softened. Add in ginger, garlic and bell pepper and sauté until fragrant. Add in lentils, tomatoes, jerk seasoning, mustard and maple syrup. Stir to combine and then add broth. Bring mixture to a boil and reduce to a simmer. Cover lentils and allow to cook for 25 minutes or until most of liquid is absorbed by lentils. Add in lime zest and lime juice, stir and remove from heat to serve. ✨
