Tomato chickpea stew with roast potatoes & salad ? by @mazaboutplants

suuuper easy midweek dinner (or WFH lunch) that’s ready in 30 mins & doesn’t require much effort/prep. And you can’t really go wrong when the main ingredients are chickpeas & tatties?? Recipe below (serves 2):

Ingredients:
5 medium potatoes cubed
1 brown onion chopped
1 tin (400g) of chickpeas
1 tsp paprika
1 tsp cumin
1 tsp ground coriander
2 tsp garlic powder
1 pack (around 200g) vine cherry tomatoes halved
1 veg stock cube with 230ml water
Salad of choice (I had rocket & spinach)

Method:
1. Add potato’s to baking tray & drizzle with olive oil, season with salt & pepper, give it a mix up and roast in oven for around 25 mins
2. Heat a pan with a drizzle of oil & add the onion, cook for 5 mins or until soft
3. Add the spices & chickpeas to the pan & cook for a few mins further
4. Finally add the tomato’s & stock and simmer for 8-10 mins
5. Serve with the roast potatoes & salad.
