*OVEN-BAKED, VEGAN, OIL-FREE, GLUTEN-FREE FALAFEL*

When you think of falafel, the first thing that comes to your mind is a deep-fried, oily, calorie-dense ball…what if we told you that you can make a non-fried, vegan & HEALTHY version of it, which is packed with nutrients and flavour? Well, it’s 100% possible and here is how to do it!???

Recipe for 16 falafel patties:

Measure 250g of dried chickpeas (not canned) and soak them in water for at least 4-5h.

Then, remove them from the water and put them into your food processor.

Chop 1 onion and add it to the processor, together with 1 cup of fresh parsley (mostly leaves, but small stems are fine). Add 4 garlic cloves, quartered. 

Add the juice of 1 squeezed lemon and half a glass of water (you can go up to 1 glass if the mixture is too dense).

Start blending the ingredients together in the food processor. Once you reach the consistency of a paste, add 1 teaspoon of cinnamon, 1 tsp of coriander, 1 tsp of ground cumin, 1 tsp of chilly powder, 1 tsp of pepper & 1 tsp of salt. Finally, add 2 tablespoons of ground flaxseeds and keep blending until all the spices are fully-integrated in the mixture.

Put some baking paper on an oven tray and start shaping the patties, which should be about 1.5 cm thick and 3-4 cm wide.

Bake for about 20 min at 180 °C in a pre-heated oven. Raise the oven T to 250 °C for the last 5-10 min to allow the patties to crisp up!

Serve with pita, veggies, tahini, hummus, tzatziki or a spicy tomato sauce! In a few words: have fun with dressings and enjoy 🙂
