Ingredientsā£ā£ā
1 cauliflowerā£ā£ā
3 tablespoons of olive oilā£ā£ā
1 teaspoon mild curry powderā£ā£ā
1 teaspoon chilli flakesā£ā£ā
Maldon saltā£ā£ā
75g dried apricots, roughly choppedā£ā£ā
25g flaked almonds, toastedā£ā£ā
50g pomegranate seedsā£ā£ā
100ml tahiniā£ā£ā
ā£ā£ā
Preheat oven to 180°C. Remove the larger leaves from the cauliflower, and then immerse completely in a large saucepan (or stockpot) filled with boiling water. Cook for 10 minutes. Drain.ā£ā£ā
Mix together the oil, curry powder, crushed chillis and Maldon salt.ā£ā£ā
Rub the cauliflower all over with the mixture.ā£ā£ā
Bake for 20 minutes.ā£ā£ā
Scatter the cauliflower with the toasted almonds, pomegranate seeds, apricots and drizzle over tahini. Add a pinch of Maldon salt to serve!ā£ā£ā
