One Pot Vegan Chilli To Keep You Warm During Those Cold Wint

One pot vegan chilli to keep you warm during those cold winter months 🥶
Ingredients:
EVOO for frying
1/2 onion
1tsp garlic paste
1tsp curry powder
1tsp smoked paprika
1tsp garam masala
1tsp all purpose seasoning
2TBSP tomato paste
1 sweet potato
1 can tinned tomatoes (chopped)
1/3C water
1 veggie stock cube
1 can red kidney beans
1 can mixed peas and carrots

HOW TO: fry up the garlic and onion until translucent. Add in the herbs, spices and tomato paste and stir for a few mins. Add in the potato, tinned tomato, water and veggie cube. Stir and let it simmer for about 30mins or until the potatoes have softened slightly. Add in the kidney beans and let it simmer further for 10mins or until the potatoes are fully cooked (we want the flavours to infuse!) finally add in the mixed peas and carrots and give it a final stir. I like to leave mine sitting for a while before I eat it so it can get extra thicccc 🤤
