one pot tomato pasta display image aaab

I got this recipe from my bestie @britneyinthesky but have made tweaks to it since first cooking it✨

•8 oz pasta (I like linguine but any will do)
• 1 pint cherry tomatoes
• blue agave
• olive oil
• 1 tsp garlic
• 1 14 oz can of coconut cream (the cream makes the sauce thicker but canned coconut milk will do too)
• 1 cup plant milk (I use unsweetened almond)
• 1 cup veg broth
• 1 tbsp nutritional yeast
• 1 tbsp corn starch dissolved in a tbsp of water
• 2 handfuls of spinach

1. Warm olive oil on medium high heat then add cherry tomatoes. Season with salt and pepper and stir for 2-3 minutes. Then add garlic and blue agave and cook for another 2-3 minutes until all or most of tomatoes have burst.
2. Remove tomatoes and garlic and transfer to a bowl or plate and set aside
3. Add milks, veg broth, and salt and pepper (to taste) to the pot and bring to a boil
4. Add nutritional yeast and cornstarch(make sure to mix cornstarch with water!)
5. Add pasta and cook. Time per instructions on package
6. Add spinach when there’s 3 minutes left
7. Add the tomatoes back in the pot and stir.
8. Serve and enjoy 💫 (add fresh parsley if you’re fancy)
